Co.Ci.No. · Mantuanische Salumi-Kultur ohne Zugeständnisse

Historic sausage craftsmanship from the Renaissance tradition.

The collaboration with Co.Ci.No. forms the actual nucleus of MaWa. Rooted in the family origins of co-founder Marta, the manufacture was the first project she realized after arriving in Germany – and the fundamental impulse for the creation of MaWa: an uncompromising quality standard, driven by direct family access rather than anonymous retail chains.

“What was once prized at the courts of the Renaissance still tolerates no industrial shortcuts today.”

The Legacy of the Gonzaga Princes

The Salame Nostrano di Castiglione looks back on a history documented as far back as the heyday of the Renaissance at the court of the Gonzaga princes. Even then, rulers and emperors valued the depth of flavor of this Mantuan specialty. To this day, Co.Ci.No. preserves this culinary heritage in its strictly artisanal, pure form. Awarded the municipal seal of origin DE.CO. (Denominazione Comunale), the manufacture follows the region's traditional recipes and aging methods without exception.

Precision instead of industrial acceleration

In production, Co.Ci.No. consistently avoids industrial shortcuts. They use only selected cuts from regional pork, balanced natural spices, and traditional hand-tying in natural casings. The unmistakable character is created without artificial ripening accelerators: in the aging chambers, the refinement takes place slowly and in the natural rhythm of time, monitored by daily sensory checks. The result is an authentic Salame Mantovano with a dense texture, fine grain, and culinary precision.

Beyond the family connection, Co.Ci.No. proved to be a crucial door-opener for the entire MaWa portfolio: with their established reputation in the region, the manufacture paved the way to other traditional top-tier producers in Lombardy.
