Description

Salame Nostrano from Castiglione is the crown jewel of Mantuan charcuterie and carries the Denominazione Comunale (DE.CO.) (municipal designation of origin). Produced according to strict specifications, all parts of the pork are coarsely minced and seasoned according to a centuries-old recipe. Hand-stuffing into crespone casings and the characteristic eight-fold tying are hallmarks of this craftsmanship. After three months of controlled aging, the product develops a noble mold and an incomparable aroma – a symbol of Italian gastronomy.

MaWa Tip: It goes excellently with cheese. Montano Manerba Ermes, homemade durum wheat bread, and a glass of young, fresh, and expressive red wine such as the Coràle Cantina Ròs.

Origin of the raw material: Exclusive selection of 100% Italian Padano pork.
Dough characteristics: Lean meat is processed by hand with the addition of diced lard to visually and flavorfully replicate the classic "mosaic" of Mantuan pork processing.
Rearing: Heavy pigs raised in Italy according to strict traditional guidelines.
Processing and mixing: Cold-processed dough, expertly seasoned with salt, black peppercorns and ground pepper, red wine, and select spices.
Filling:
Stuffed into a natural Crespone casing and tied strictly by hand with string.
Seasoning/Curing: Slow and natural maturation in an underground terracotta cellar for 90 days. This resting phase promotes the development of noble molds, which are essential for refining the flavor and protecting the meat.
Flavor profile: Structured, savory, pleasantly sweet, and with great persistence.

Tasting notes: When sliced, the salami presents itself as a compact, ruby-red disc with finely defined white cubes of fat. On the nose, it unfolds complex and enveloping aromas reminiscent of the aging cellar, sweet spices, black pepper, and subtle notes of red wine. On the palate, it is soft yet well-structured, with a perfect balance between savory and meaty sweetness and a long, aromatic finish.
Pairings: The undisputed king of large, rustic platters and excellent gastronomic selections.
Serving temperature: 16–18°C (We recommend the classic diagonal cut into "salami slices" and carefully removing the casing only just before consumption).
