Description

The Asolo Prosecco Superiore DOCG Extra Brut Millesimato from Rive della Chiesa is a tribute to the mineral purity of the Asolo hills. This sparkling wine is characterized by its extraordinary dryness (almost no residual sugar), which highlights the integrity of the Glera grape. The fine and persistent perlage releases a crystal-clear bouquet of fresh citrus fruits and yellow-fleshed fruit. On the palate, the spicy note meets a zesty yet balanced freshness, making it an authentic expression of a terroir that embodies elegance. It is the perfect choice for those seeking a technically sophisticated, clean, and deeply territorial wine, ideal with seafood crudités and refined fish dishes.

MaWa Tip: Its dryness and sharp freshness "cleanse" the palate: try it with flakes of Gran Maddalena 12 months Cooprolama or with the Manerba Ermes Caciotta Naturale for a particularly pure aperitif.

Vineyard of origin: Asolo Hills (Asolo and Montello), Treviso, Veneto, Italy
Soil characteristics:
Loose, marly and calcareous-sandy, very rich in minerals and with excellent drainage.
Vine training system: Cappuccina (Double inverted) / Sylvoz
Harvest period: From the second to the third week of September. The harvest is carried out exclusively by hand, and the grapes are sorted into crates.
Winemaking: Gentle pressing of the grapes, static decanting of the must, and fermentation in stainless steel tanks at a controlled temperature (16−18 °C).
Second fermentation / Sparkling winemaking: Second fermentation in an autoclave according to the Martinotti-Charmat method with slow secondary fermentation at a low temperature to preserve varietal freshness.
Refinement:
Aged on the lees in an autoclave for about 30-40 days before bottling.

Appearance: Crystal-clear, pale straw yellow with dense, lively perlage.
Aroma (Nose): Precise, pure bouquet of crisp green apple, Williams pear, lemon zest, and a distinct, salty-chalky minerality.
Taste (Palate): Very dry (Extra Brut, 3.5 g/l residual sugar), straightforward and focused. The crisp acidity harmonizes perfectly with the taut body and lively mousse.
Finish: Long, taut, and extremely clean mineral finish.
Pairings: Ideal as a dry aperitif for lovers of sparkling flavors. Goes excellently with raw seafood, fish tartare, sushi, pan-fried fish, seafood risotto, and light vegetable appetizers.
